Wildflower Honey
This honey is produced in the wildest areas of the Delphi municipality, by our tirelessly, hardworking honeybees.
The harvesting of this honey is done at our main apiary, which, according to recent archeological evidence, was discovered to be right next to a location mentioned in ancient scripts, and referred to in ancient times as “gonia”, or “corner”. “Gonia” is where the ancient chariot racing stadium, or hippodrome of Delphi’s Pythian Games, was located. In this hippodrome the famous “Heniokhos” or “Charioteer”, raced with his four-horse chariot “Tέθριππο” (Tethrippo – A four horse chariot), to honor pythia who was also known as the Delphic bee.
Therefore, in order for us to honour this ancient event, which took place at the base of the hill where we have our apiary, we have named our wildflower honey “Tέθριππο”
Wildflower honey is our first harvest of the year. Harvested from three different wild areas in the Delphi municipality that contains several thousand species of wildflowers endemic to our area that the bees love. Due to the wide diversity of these wild flowers the flavour produced is complex and varied, ranging from light and floral, with notes of lavender, and hints of dark fruits, spices and herbs. An ideal accompaniment to a happy breakfast!
