After harvesting, our olives are taken directly to the olive press as fast as possible to ensure that the acidity levels are kept at lower than 0.8%, thus ensuring a top quality extra virgin olive oil containing all the key health giving properties.
This quick processing also allows us to capture its fresh, vibrant, and complex flavours, offering a grassy, fruity taste, and herbaceous notes with a characteristic bitterness and a spicy, peppery finish in the throat that signifies high quality, richness in antioxidants, and freshness.
